A good cake is a short list of honest ingredients and a long list of small decisions: how far to whip the cream, when the mango is ready, how long a glaze should rest before it meets the mousse.
Most cakes in the city skip those decisions. They are built from premixes and frozen bases, decorated to look the same in every branch, and sold days after they were made.
Ondine works the other way. Every cake is made for the day it will be eaten, in a kitchen small enough that the person who glazes it also tastes it.
- I
Fruit decides the menu
Mango in the hot season, strawberries from the north in the cool months. When a fruit is not at its best, that cake leaves the menu.
- II
Butter, cream, no shortcuts
No premixes, no vegetable cream, no stabilisers you would need to look up. The ingredient list fits on the box.
- III
Baked for your date
Whole cakes are made in the forty-eight hours before you collect them, never pulled from a freezer.
- IV
Small on purpose
A limited number of cakes each day, so each one gets the attention it needs.
